Summer has finally come and warmth seems to have settled around here. In the past few days I craved some of the foods my gran used to make us as children. I’m talking about the ultimate comfort foods that shaped our childhood pallets. One of these, was the most decadent, simple and extremely cheesy dish – The French Style Potatoes, beloved by all, especially children.
This savoury dish can be served as a side or just as a vegetarian meal in itself. I’m not sure what relation it has with the cuisine in France, but here in Transylvania, it is a very popular and homey dish.
The French Style Potatoes
All you need is some boiled potatoes, eggs, cream, cheese and spices. Let me walk you through everything you need so you get a really good batch.

Ingredients
4 medium sized potatoes, boiled
3 hard boiled eggs
100g cooking cream + 3 tbsp thick sour cream
200g shredded cheese
Spices: salt, pepper, thyme
Directions
- Boil the potatoes and the eggs. Peel them gently.
- Chop them evenly
- In a buttered pan, start creating the layers as folow: potatoes, eggs, cream mixture (cooking cream, sour cream, spices) and the cheese. Finish off with the cheese layer.
- Bake it at 180C for about 30 minutes or until it looks like this:
