So this is probably hands down my favourite summer food. I absolutely love ripe summer tomatoes, especially when my mum grows them. Juicy, full of flavour and vitamins, they make wonderful salads, aaand most importantly soup. Here’s how I make it.
Creamy summer tomato soup:
4-5 medium tomatoes
1 medium onion
3-4 garlic cloves
Spices: fresh basil, oregano, thyme, salt, pepper
1 cup homemade tomato juice
- Chop tomatoes, onion and garlic and bake it for about 20-30 mins at 200C with all the spices listed above and a splash of olive oil
- After it’s out of the oven, transfer them into a pot and add more basil, the tomato juice and simmer on low heat for another 30 mins.
- Blend the whole thing and serve with homemade croutons and parmesan shavings,
It’s so luscious and rich I can’t even begin describing it. It’s the perfect fix for a hot afternoon when you don’t really feel like cooking something more complex and want to have some more for the next day.
This summer tomato soup recipe makes for aprox. 2-3 portions, depending on your appetite 🙂
To make the croutons, simply dice some leftover bread and pop it in the oven with a splash of olive oil and bake it for 20 mins at 180C.
